Ginger Pachadi

Spicy Potato Salad with Ginger Mayonnaise

Ingredients for 4 person
1 Kg new potatoes
150ml dry cider
6 teaspoons Ginger Pachadi
1 bunch of spring onions
150ml mayonnaise
1 tbsp toasted sesame seeds
juice of 1/2 lime
chopped mint

Method
Wash and boil the potatoes, cut up if required and put into a bowl. Pour over the cider and gently mix occasionally, as they cool.
Mix the mayonnaise and the Ginger Pachadi together, pour over the potatoes and mix well. Add the lime juice and salt if required.
Sprinkle the sesame seeds and the chopped mint over the salad and serve.

Salmon Steaks with Spicy Ginger Cream Sauce

Ingredients for 4 persons
4 salmon steaks
1/2 tablespoon vegetable oil
140ml whipping cream
50g unsalted butter, diced
6 teaspoons Ginger Pachadi
fresh coriander and lime quarters to garnish
juice of 1/2 lime

Method
Rub the salmon with a little salt and pepper. Heat the oil in a large frying pan, when hot, turn down heat and fry salmon until just cooked. Drain on kitchen paper and keep warm.
Meanwhile heat the cream in a small pan and whisk in the butter, piece by piece, to thicken the cream. Add the Ginger Pachadi

and whisk in each spoonful; taste and add more if required. Heat for a further 2-3 minutes and remove from heat. Add the
juice of 1/2 lime and mix well.
Put the salmon over a platter and pour over the sauce. Garnish with coriander and
limes and serve with Andhra Gold Rice and steamed green beans.
