Pachadi
Salad
of French Green Beans with Yogurt & Coconut Dressing
Ingredients for 4
persons
250g green beans, topped and tailed
3-6 teaspoons of Garlic Pachadi
4 tablespoons of plain Greek yogurt
1 tablespoon of chopped coriander
Method
Cook the beans in plenty of salted boiling water, until just tender. Drain
and rinse under cold water. Dry the beans on kitchen paper to remove all
the water.
In a bowl, mix the Garlic Pachadi into the yogurt, starting with 3 teaspoons.
Taste and add more if required, for a spicier mix.
Add the beans and mix thoroughly. Put in a serving dish and garnish with
coriander. Serve.
You can use any vegetable, cooked or raw,
with the same dressing. Or why not try prawns or other seafood.
